Oysters are a delicious and nutritious seafood dish, enjoyed worldwide, particularly in restaurants.

Ingredients for Cooking Oysters (Serves Four):
- 40 oysters.
- 3/4 cup of vegetable oil.
- 2 1/2 cups of water.
- 2 lemons.
- 1 1/2 cups of rice (soaked in water for 30 minutes).
- 4 onions, diced.
- 1 tablespoon of raisins (soaked in water).
- 1 teaspoon of tomato paste.
- 8 tablespoons of olive oil.
- 1 tablespoon of sugar.
- 1 teaspoon of lemon juice.
- 1 teaspoon of mixed spices (seven spices).
- Salt to taste.
- Black pepper to taste.
- 1 small cup of chopped dill.
How to Cook Oysters:
Clean the Oysters:
- Wash the oysters thoroughly under running water.
- Use a brush to remove any spots or debris from the shells.
- Gently open a small gap in the shell without separating it completely.
- Soak the oysters in cold water, rinse again, and set aside.
Prepare the Filling:
- Soak the raisins in water.
- Heat the vegetable oil in a pot and sauté the diced onions until softened.
- Add the tomato paste and stir well.
Cook the Rice:
- Add the rice to the pot with the onions and oil. Stir until combined.
- Season with salt, black pepper, seven spices, lemon juice, and sugar.
- Add the soaked raisins and water. Stir well and bring to a boil.
- Cover the pot tightly and cook the rice over low heat until done.
- Mix in the chopped dill and set aside.
Stuff the Oysters:
- Using a small spoon, fill each oyster with the prepared rice through the opened gap.
- Close the oyster shells securely.
Cook the Oysters:
- Arrange the stuffed oysters in a deep pot with the wider side of the shell facing down.
- Drizzle olive oil over the oysters.
- Place a heat-resistant plate on top of the oysters to press them down.
- Add hot water to the pot and cook over medium heat for about 30 minutes until the oysters are fully cooked.
Serve:
- Transfer the oysters to serving plates.
- Serve hot and enjoy this flavorful and hearty dish with your family.
