Ingredients for Egyptian Meat Fatteh (Serves Four):

Egyptian Meat Fatteh


For the Meat:

  • 1 kilogram of lamb cubes.
  • 3 bay leaves.
  • 3 cardamom pods.
  • A few mastic gum pieces (optional).
  • 1 onion, peeled and quartered.
  • Ghee or butter, as needed.
  • Salt and black pepper, to taste.

For the Rice:

  • 2 cups of rice.
  • 2 cloves of minced garlic.
  • 3 tablespoons of rice vinegar.
  • 2 1/2 cups of meat broth.

For the Sauce:

  • 4 cloves of minced garlic.
  • 1 teaspoon of ground coriander.
  • 3 tablespoons of tomato paste.
  • 2 peeled and finely chopped tomatoes.
  • 3 tablespoons of vinegar.
  • 1 cup of water.
  • Salt and black pepper, to taste.

For the Bread Layer:

  • Arabic bread, cut into squares.
  • Vegetable oil, for frying.
  • 1 teaspoon of garlic powder.

How to Cook Egyptian Meat Fatteh:

  1. Cook the Meat:

    • Place the lamb cubes in a pot and cover with water.
    • Bring to a boil, then skim off the foam.
    • Add bay leaves, cardamom, mastic gum (if using), and onion.
    • Reduce heat, cover, and simmer until the meat is tender.
    • Drain the meat, reserving the broth.
    • Heat ghee in a skillet, add the meat, and sauté until lightly browned. Season with salt and black pepper.
  2. Prepare the Rice:

    • Heat 2 tablespoons of ghee in a pot.
    • Add minced garlic and 3 tablespoons of vinegar, stirring until fragrant.
    • Add the rice and mix well.
    • Pour 2 1/2 cups of reserved meat broth over the rice.
    • Cover and cook on low heat until the rice is fully cooked.
  3. Make the Sauce:

    • In a skillet, heat 1 tablespoon of ghee.
    • Add minced garlic and ground coriander, stirring until aromatic.
    • Mix in the tomato paste, chopped tomatoes, vinegar, and water.
    • Season with salt and black pepper.
    • Simmer until the sauce thickens.
  4. Fry the Bread:

    • Heat vegetable oil in a skillet and fry the bread squares until golden and crispy.
    • Drain on paper towels.
  5. Assemble the Dish:

    • In a deep dish, place a layer of fried bread.
    • Pour a small amount of tomato sauce and meat broth over the bread to soften it.
    • Add a layer of cooked rice, then another layer of softened bread and sauce.
    • Repeat with another layer of rice.
  6. Top and Serve:

    • Flip the dish onto a serving plate.
    • Arrange the sautéed meat on top and garnish with additional fried bread pieces.
