Green Kashka – Recipe and Preparation Method
Green Kashka is one of the simplest dishes in Damascene cuisine, widely spread across many Arab regions due to its delicious taste, affordable ingredients, and ease of preparation. It only takes about 10 minutes to prepare its ingredients and another 10 minutes to make. Here, we present a recipe sufficient for three people, hoping you will enjoy this delightful Damascene dish.
Ingredients for Green Kashka:
- 1 cup of yogurt
- 2 tablespoons of fine bulgur (cleaned thoroughly)
- 3 cloves of mashed garlic
- 3 tablespoons of chopped parsley
- 1 cup of crushed walnuts
- 1 cup of strained yogurt (labneh)
- 2 tablespoons of olive oil
- 1 small onion, finely chopped (or green onion if preferred)
For Garnishing:
- Fresh mint (to taste)
- Paprika (to taste)
- Red chili flakes (to taste)
Preparation Method for Green Kashka:
- Place the bulgur and yogurt in a bowl and mix them well until combined. Refrigerate the bowl overnight.
- Remove the bowl from the refrigerator, add the strained yogurt (labneh) to the yogurt and bulgur mixture, and mix thoroughly.
- Add the mashed garlic, chopped onion, crushed walnuts, and chopped parsley to the mixture, and mix well until all ingredients are combined.
- Pour the kashka mixture into a serving dish, sprinkle paprika and red chili flakes on top, then garnish with fresh mint leaves and some extra crushed walnuts.
- The green kashka is now ready. Drizzle a suitable amount of olive oil on top, and serve it to family or guests to enjoy its rich taste. Bon appétit!
