Kabuli Rice – Recipe and Preparation Method
Kabuli Rice is a delicious dish from Afghan cuisine, rich in nutritional value and easy to prepare. It takes around 70 minutes to make. This recipe serves four people. Enjoy this flavorful dish!
Ingredients for Kabuli Rice:
- 3 cups of basmati rice
- 1 kilogram of lamb, cut into pieces
- 1 medium onion, finely chopped
- 3 medium potatoes, cut into medium-sized pieces
- 1 cup of orange juice
- 2 tablespoons of tomato paste
- 1 teaspoon of black pepper
- ½ teaspoon of ground cumin
- ½ teaspoon of citric acid (or lemon salt)
- 1 tablespoon of saffron
- Rose water (optional)
- Kewra water (optional)
- Drinking water (as needed)
- 1 teaspoon of ground cardamom
- 1 teaspoon of whole cloves
- 2 cinnamon sticks
- Zest of 1 orange
- ½ cup of vegetable oil
- 1 teaspoon of ground ginger
Preparation Method for Kabuli Rice:
- Rinse the rice thoroughly and soak it in water for about 30 minutes.
- In a large pot, heat the vegetable oil over medium heat, add the chopped onion, and sauté until softened.
- Add the lamb pieces, tomato paste, orange zest, and orange juice to the pot.
- Add saffron, rose water, kewra water, citric acid, and ground ginger. Stir all ingredients until well combined.
- Add the potatoes, cumin, cinnamon sticks, cardamom, cloves, black pepper, and enough drinking water. Stir, cover the pot, and let the ingredients cook until everything is almost tender.
- In a separate pot, add the soaked rice, drained of water, with a bit of vegetable oil and enough water to cook the rice.
- Stir and cook the rice until fully cooked.
- Once the rice is ready, add it to the pot with the lamb mixture, and stir to combine. Let it cook together until everything is tender and flavors are well-blended.
