Ingredients for Kibbeh Sajiyah (Serves 4)

- A pinch of Aleppo pepper.
- A pinch of cumin.
For the Filling:
- 1 kg coarsely ground lamb meat.
- 500 grams finely chopped onions.
- 50 grams roasted pine nuts.
- 50 grams roasted almonds.
- 2 tablespoons ghee or clarified butter.
- ¼ teaspoon sweet spices.
- ¼ teaspoon black pepper.
- ¼ teaspoon cinnamon powder.
- Salt to taste.
Steps to Prepare Kibbeh Sajiyah
Prepare the Bulgur Dough:
- Soak the bulgur in a cup of water until softened. Add onions and spices.
Prepare the Filling:
- Melt the ghee in a skillet. Add the finely chopped onions and sauté until soft.
- Stir in the coarsely ground lamb meat and cook until fully browned.
- Add the spices, roasted pine nuts, and almonds. Stir to combine and set aside to cool.
Make the Dough:
- Pass the soaked bulgur through a meat grinder twice. If the bulgur is dry, add a small amount of water along with some minced lamb to achieve a smoother texture.
- Place the ground bulgur in a bowl, add the remaining minced lamb, and knead well until the dough is smooth and cohesive.
Shape the Kibbeh:
- Form the dough into flat disks. Place about 2 tablespoons of filling onto one disk. Cover with another disk, sealing the edges tightly to enclose the filling completely.
Cook the Kibbeh:
- Heat a generous amount of oil in a skillet. Fry the stuffed kibbeh disks until golden brown on both sides.
Serve:
- Remove the fried kibbeh and place them on paper towels to drain excess oil. Serve hot and enjoy their crispy exterior and flavorful filling.
