Koshary Tahrir Sauce – How to Prepare Koshary Tahrir Sauce – Cooking Tutorial

Koshary Tahrir is a popular and beloved dish in Egyptian cuisine, widely enjoyed across Egypt and neighboring regions. This dish holds great significance due to its high nutritional value, offering numerous health benefits.


Ingredients for Koshary Tahrir Sauce (Serves 6):

Koshary Tahrir Sauce

 

For the Koshary:

  • 1 cup of brown lentils, thoroughly washed
  • ½ kg of pasta
  • 2 large onions, sliced
  • ¼ cup of oil
  • 2 cloves of crushed garlic
  • 4 cups of water
  • 1 cup of rice
  • Vermicelli noodles
  • 1 cup of chickpeas
  • Salt and pepper to taste

For the Tomato Sauce:

  • 4 ripe tomatoes, blended into a puree
  • 2 tablespoons of tomato paste
  • Salt to taste
  • Pepper to taste
  • Cumin to taste
  • 2 cloves of minced garlic
  • 1 teaspoon of dried coriander
  • 2 tablespoons of water
  • 2 tablespoons of oil

For the Vinegar Sauce ("Dakka"):

  • 3 cloves of minced garlic
  • 1 tablespoon of oil
  • 1 tablespoon of lemon juice
  • 1 tablespoon of vinegar
  • ¼ teaspoon of cumin
  • ¼ teaspoon of red chili powder
  • ⅓ cup of water

How to Prepare Koshary Tahrir Sauce:

  1. Prepare the Onions:

    • Heat oil in a small skillet and fry the sliced onions until golden brown.
    • Remove the onions and place them on paper towels to drain excess oil.
  2. Cook the Pasta:

    • Boil pasta in a pot of hot water for 10 minutes, then drain and set aside.
  3. Prepare the Tomato Sauce:

    • Heat oil in another pot and sauté the garlic until fragrant.
    • Add the pureed tomatoes, tomato paste, salt, pepper, cumin, and dried coriander.
    • Pour in 1 cup of water and let the sauce simmer over low heat until it thickens.
  4. Cook the Lentils and Chickpeas:

    • In a small pot, cook the lentils in water with salt, pepper, and cumin until tender.
    • Similarly, cook the chickpeas in another pot until soft.
  5. Prepare the Vinegar Sauce ("Dakka"):

    • In a small pan, heat the oil and sauté the garlic.
    • Add vinegar, lemon juice, water, cumin, and red chili powder.
    • Bring the mixture to a boil for 2 minutes, then remove from heat.
  6. Cook the Rice:

    • In a pot, toast the vermicelli noodles in a bit of oil until golden brown.
    • Add the rice and half a cup of water, stirring to combine.
    • Lower the heat and cover the pot, cooking until the rice is fully cooked.
  7. Assemble the Koshary:

    • In a serving dish, layer the boiled pasta, followed by the rice and vermicelli mixture, then the lentils and chickpeas.
    • Top with the tomato sauce, fried onions, and a drizzle of the vinegar sauce.
  8. Serve:

    • Serve warm and enjoy the hearty, flavorful taste of this classic Egyptian dish with your family!
