Mosuli Large Kibbeh is a unique and flavorful dish from Iraqi cuisine, particularly from the city of Mosul, which gave it its name. It is one of the standout dishes of the region, enjoyed throughout Iraq and neighboring areas.

For the Filling:

  • 1 kg finely minced meat
  • 1 onion, chopped
  • 1 onion, quartered
  • ½ cup rice
  • 3 tablespoons vegetable oil
  • ½ teaspoon mixed spices
  • 1 teaspoon cumin
  • 1 teaspoon black pepper
  • 1 teaspoon sweet paprika
  • ½ teaspoon ground cloves
  • 1 teaspoon salt

For the Dough:

  • 1 cup fine dark bulgur
  • 1 ½ cups semolina
  • 1 teaspoon sweet paprika
  • ½ teaspoon salt
  • Water for boiling the kibbeh
  • Turmeric and cumin (to taste)

How to Prepare Mosuli Large Kibbeh:

  1. Prepare the Dough:

    • Soak the bulgur in water for 10 minutes, then drain it thoroughly.
    • In a mixing bowl, combine the soaked bulgur with the minced meat, sweet paprika, and quartered onion.
    • Mix until the ingredients are combined, then grind the mixture in a food processor until it forms a cohesive dough.
    • Add vegetable oil to the dough and process it again for better consistency.
  2. Prepare the Filling:

    • Heat vegetable oil in a skillet over medium heat.
    • Sauté the chopped onion until translucent.
    • Add the minced meat, salt, black pepper, sweet paprika, ground cloves, and cinnamon. Stir until well combined.
    • Cook until the meat is browned and fully cooked, then set aside to cool.
  3. Assemble the Kibbeh:

    • Divide the dough into even portions and shape them into flat, round discs.
    • Place a spoonful of the filling on one disc and cover it with another disc. Seal the edges tightly to enclose the filling.
  4. Flatten the Kibbeh:

    • Place a piece of plastic wrap over the kibbeh and gently press it flat with a rolling pin to make it thin and even.
    • Grease a baking tray and place the kibbeh onto it.
  5. Bake the Kibbeh:

    • Preheat the oven to 200°C (390°F).
    • Bake the kibbeh for 15 minutes, or until golden and cooked through.
  6. Serve:

    • Remove the kibbeh from the oven and cut it into quarters for serving.
    • Serve hot with yogurt or a side salad, and let the family enjoy the hearty, savory flavors of this traditional dish.
