  • 1 whole lamb (5-8 kg)
  • 4 kg basmati rice, washed
  • Cooked vegetable mixture
  • 5 carrots
  • 5 onions
  • 5 tablespoons mandi spices
  • 5 tablespoons cumin
  • 5 tablespoons black pepper
  • 5 tablespoons curry powder
  • 5 tablespoons paprika
  • 5 tablespoons salt
  • 1 cup cooking oil
  • 1 large cup of yogurt
  • 1 kg mixed nuts (toasted)

How to Prepare Roast Lamb in the Oven:

  1. Prepare the Lamb:

    • Wash and clean the lamb thoroughly.
    • In a bowl, mix cooking oil, paprika, cumin, black pepper, and yogurt. Stir well until combined.
    • Rub the mixture generously all over the lamb, inside and out.
    • Let the lamb marinate overnight in the refrigerator to absorb the flavors.
  2. Prepare the Rice Filling:

    • In a large pot, combine the basmati rice, mixed nuts, mandi spices, cooked vegetables, salt, onions, and carrots.
    • Stir until well mixed and cook the mixture until the rice is partially done.
  3. Stuff the Lamb:

    • Fill the inside of the lamb with the cooked rice mixture.
    • Securely close the opening of the lamb using kitchen twine or skewers to keep the stuffing inside.
  4. Wrap and Bake:

    • Wrap the lamb tightly in aluminum foil to retain moisture during cooking.
    • Place the lamb in a deep roasting pan with a small amount of water at the bottom to create steam.
    • Preheat the oven to 240°C (464°F) and roast the lamb for 5 hours, or until tender.
  5. Serve:

    • Once cooked, remove the lamb from the oven and carefully unwrap it.
    • Place the lamb on a large serving platter (mansaf) and garnish with toasted nuts.
    • Serve the stuffed rice alongside the lamb, or, alternatively, serve the rice separately if the lamb was roasted without stuffing.
