Ingredients for Cooking Steak Tartare (Serves 4):
For the dish:
- 8 potatoes
- 3 tablespoons of olive oil
- 300 grams of beef fillet
- Mayonnaise (to taste)
For the sauce:
- 2 egg yolks
- 1 green onion, finely chopped
- 40 grams of pickles, diced
- 2 tablespoons of mustard
- 1 fillet of anchovy, chopped
- ¼ teaspoon of paprika
- ¼ teaspoon of Tabasco sauce
- ¼ teaspoon of Worcestershire sauce
- 1 tablespoon of olive oil
- 2 tablespoons of finely chopped tarragon, parsley, and garlic
How to Prepare Steak Tartare:
Prepare the Potatoes:
- Rub the potatoes with half the quantity of olive oil.
- Pierce each potato with a fork and place them in the microwave on high heat for 8 minutes.
- Transfer the potatoes to a baking tray and bake them in a preheated oven at 190°C for 40 minutes, or until they turn golden brown.
- Remove the potatoes from the oven, cut them in half, peel them, and chop them into small pieces.
- Coat the pieces with olive oil and salt, then return them to the oven for an additional 10 minutes to crisp them up.
- Turn off the oven and leave the potatoes inside to keep them warm.
Prepare the Sauce:
- In a bowl, mix the egg yolks, pickles, green onion, mustard, anchovy, paprika, Tabasco sauce, Worcestershire sauce, and olive oil. Stir until all the ingredients are well combined.
- Add the beef, salt, and black pepper, then mix thoroughly.
Assemble the Dish:
- Place the steak tartare on serving plates alongside the potatoes.
- Garnish with mayonnaise, garlic, tarragon, and parsley.
