Vegetable Curry – Recipe and Preparation Method
Vegetable Curry is a nutritious, low-calorie dish with a delicious taste and easy preparation. It takes only about 60 minutes to make. This recipe serves four people. Enjoy this flavorful dish!
Ingredients for Vegetable Curry:
- 500 grams of cauliflower, cut into florets
- 250 grams of large-cut carrots
- 300 grams of medium-sized potato cubes
- 2 medium tomatoes, diced into small cubes
- 100 grams of butter
- ¼ cup of black raisins, soaked in warm water
- ½ cup of heavy cream
- ¼ cup of coconut milk
- 2 cups of vegetable broth
- ¼ teaspoon of red chili powder
- ½ teaspoon of garam masala
- ¼ teaspoon of white pepper
- ¼ teaspoon of black pepper
- 1 tablespoon of curry powder
- Salt to taste
Preparation Method for Vegetable Curry:
- Heat the butter in a large pot, add the carrots and potatoes, and sauté. Cover the pot and cook for 10 minutes.
- Add the cauliflower and cook for another 10 minutes, stirring occasionally. Then add the tomatoes and cook for 2 more minutes.
- Pour in the heavy cream, coconut milk, and vegetable broth. Allow the mixture to simmer on low heat until it thickens slightly.
- Drain the soaked raisins and add them to the pot along with the curry powder, salt, chili powder, white pepper, black pepper, and garam masala. Stir everything well to combine.
- Let the pot simmer for about 5 more minutes until all the vegetables are cooked through.
