For the Kibbeh Mixture:

    3 cups of rice.
    1/2 teaspoon of turmeric.
    Salt (to taste).

    500 grams of finely ground meat.
    2 medium-sized onions, finely chopped.
    Chopped parsley (as needed).
    Salt (to taste).
    1 teaspoon of mixed spices.
    1/4 cup of fried almonds.
    1 tablespoon of raisins.
    2 tablespoons of vegetable oil.

Preparation Steps for Aleppo Kibbeh

Preparing the Rice Mixture:

    Cook the rice in a pot of water without adding oil. Add salt and turmeric, and let the rice cook until done.
    Remove the rice from the heat and let it cool completely.

Preparing the Filling:

    Heat the vegetable oil in a pan over medium heat. Add the chopped onions and sauté until softened.
    Add the ground meat and stir well. Sprinkle the mixed spices and salt over the meat, mixing until the ingredients are fully combined.
    Once the meat is cooked, add the chopped parsley, raisins, and fried almonds. Mix well, then remove the filling from the heat and let it cool.

Assembling the Kibbeh:

    Knead the cooked rice thoroughly by hand or using an electric mixer until it becomes soft and dough-like.
    Shape the rice dough into small discs. Create a hollow in the center of each disc and fill it with a spoonful of the prepared filling. Seal the opening carefully to ensure the filling doesn’t escape during frying.
    Heat a generous amount of oil in a deep frying pan. Fry the kibbeh discs in batches until golden and fully cooked.
    Remove the fried kibbeh and place them on paper towels to absorb excess oil.
