Algerian T’reeda – A Traditional Recipe

T’reeda is a traditional Algerian dish known for its rich flavors and hearty ingredients. It’s similar to "tharid" and is a favorite across Algeria.   • 1 kilogram of semolina.

  • 500 grams of lamb.

  • 3 cloves of minced garlic.
  • 2 tablespoons of ghee (or butter).
  • ¼ cup of oil.
  • 1 cup of boiled chickpeas.
  • 1 teaspoon of paprika.
  • 1 teaspoon of dried coriander.
  • 2 tablespoons of tomato paste.
  • 1 carrot, peeled and cut into chunks.
  • 1 zucchini, cut into chunks.
  • Salt and pepper (to taste).
  • Water (to cover).

Preparation Steps:

1. Preparing the Dough:

  1. In a large bowl, combine the semolina and a pinch of salt.
  2. Gradually add water while mixing until a firm dough forms.
  3. Let the dough rest for 20 minutes.
  4. Knead the dough for 10–15 minutes until smooth and pliable.
  5. Divide the dough into small balls and roll each one into thin sheets.
  6. Allow the sheets to dry slightly, then cut them into rectangles.
  7. Lay the rectangles on a clean cloth to dry further while preparing the broth.

2. Preparing the Broth:

  1. Heat the ghee and oil in a large pot over medium heat.
  2. Add the lamb, onions, and garlic, and sauté until the lamb is browned.
  3. Stir in the paprika, dried coriander, salt, and pepper.
  4. Add the tomato paste and mix well.
  5. Pour in enough water to cover the lamb. Bring to a boil, then reduce the heat and simmer until the meat is tender.
  6. Add the chickpeas, carrots, and zucchini, and continue cooking until the vegetables are soft.

3. Cooking the Dough:

  1. Heat oil in a frying pan.
  2. Fry the dough rectangles until they turn golden pink. Remove and drain on paper towels.

4. Assembling the Dish:

  1. Arrange the fried dough in serving plates.
  2. Pour the hot broth over the dough, ensuring it is well-soaked.
  3. Top with the lamb, vegetables, and chickpeas.

Serving:

  • Serve the T’reeda warm, garnished with fresh herbs if desired.
  • Pair with a side of fresh salad or pickled vegetables for a complete meal.
