Bahraini Chicken Majboos is a beloved traditional dish in Gulf cuisine, celebrated for its rich flavors and high nutritional value. While it is moderately challenging to prepare and requires over two hours to cook, the result is well worth the effort. This recipe serves five people.
Ingredients for Bahraini Chicken Majboos
For the Chicken and Rice:
- 1 whole chicken, cut into pieces.
- 2 medium-sized onions, chopped.
- 3 tablespoons of butter.
- 2 tablespoons of vegetable oil.
- 1 green chili, chopped.
- 1 tablespoon of grated ginger.
- 5 cloves of garlic, minced.
- 2 cups of rice, soaked for 40 minutes.
- 400 grams of crushed tomatoes.
- 3 dried limes (loomi).
- 3 cups of chicken stock.
- 1 teaspoon of turmeric.
- 4 green cardamom pods.
- 1/2 teaspoon of ground cloves.
- 1 cinnamon stick.
- 2 teaspoons of salt.
- Rose water (as desired).
For the Spice Mix:
- 1 tablespoon of whole black peppercorns.
- 1 tablespoon of whole cumin seeds.
- 1 tablespoon of whole coriander seeds.
- 2 green cardamom pods.
- 1 teaspoon of whole cloves.
- 1 tablespoon of paprika.
For Garnish:
- Chopped parsley (as desired).
Preparation Steps for Bahraini Chicken Majboos
Preparing the Spice Mix:
- Toast the black peppercorns, cumin seeds, coriander seeds, cinnamon stick, cloves, and cardamom pods in a dry pan over medium heat for about 4 minutes, stirring occasionally.
- Add the paprika and grind all ingredients into a fine powder.
Preparing the Chicken:
- Heat the vegetable oil in a large pot over high heat. Fry the chicken pieces until golden on all sides. Remove and set aside.
- In the same pot, melt the butter over medium heat. Add the chopped onions and sauté until softened.
- Add the garlic, ginger, and chopped chili. Sauté for 2 minutes. Stir in the turmeric and 1 tablespoon of the prepared spice mix.
Cooking the Chicken:
- Add the fried chicken pieces back to the pot. Stir in the loomi, crushed tomatoes, cardamom pods, salt, and ground cloves.
- Pour in the chicken stock, bring to a boil, then reduce the heat to low. Cover and simmer for 60 minutes, allowing the flavors to meld and the chicken to cook through.
Preparing the Rice:
- Add the soaked rice to the pot with the chicken mixture. Cover and cook over low heat until the rice is tender and has absorbed the liquid, about 20 minutes.
Serving:
