First Layer:

  • 330 grams of all-purpose flour
  • 375 grams of white sugar
  • 1 tablespoon of baking powder
  • ¼ teaspoon of table salt
  • 170 grams of butter
  • 1 cup of whole milk
  • 4 egg whites
  • 1 whole egg
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of lemon juice

Second Layer:

  • 4 cups of whole milk
  • ½ cup of white sugar
  • 1 teaspoon of vanilla extract
  • 1 cup of cornstarch
  • 2 cans of halved canned apricots

Third Layer:

  • 1 packet of powdered gelatin
  • 4 tablespoons of cold water
  • 2 tablespoons of white sugar

How to Prepare Egg Eyes Dessert

Preparing the First Layer:

  1. Combine all the dry ingredients for the first layer in a mixing bowl and mix until well combined.
  2. Add the butter and mix until the mixture has a crumbly, sandy texture.
  3. Add the egg whites and mix, followed by the whole egg. Mix until smooth.
  4. Gradually pour in the milk and lemon juice, stirring until the batter is well blended.
  5. Grease a rectangular cake pan with butter and line it with parchment paper. Pour the batter into the pan.
  6. Preheat the oven to 180°C (356°F). Bake the cake for about 25 minutes or until fully cooked.
  7. Remove the cake from the oven and let it cool completely.

Preparing the Second Layer:

  1. In a bowl, mix ¾ cup of milk with sugar, cornstarch, and vanilla until the cornstarch dissolves.
  2. Heat the remaining milk in a pot until it begins to boil. Gradually add the cornstarch mixture, stirring continuously until the mixture thickens.
  3. Let the mixture cool slightly, then pour it evenly over the cake layer.
  4. Drain the canned apricots and arrange them on top of the custard layer.
  5. Place the cake in the refrigerator to allow the second layer to set.

Preparing the Third Layer:

  1. Dissolve the gelatin in cold water in a small bowl. Add the sugar and mix until fully combined.
  2. Brush the gelatin mixture over the apricots and the custard layer.
  3. Return the cake to the refrigerator and chill until the third layer is fully set.
