  • 1 teaspoon of cumin.
  • 1 teaspoon of salt.
  • 1 teaspoon of black pepper.
  • Salted water for cooking.

Preparation Steps:

1. Preparing the Kebab Mixture:

  1. In a large bowl, combine the minced veal and minced chicken. Mix thoroughly until well blended.
  2. Add the soaked bulgur to the meat mixture and continue mixing until fully combined.
  3. Add the finely chopped onions, olive oil, cumin, salt, and black pepper. Mix until the ingredients form a cohesive kibbeh dough.

2. Shaping the Kebab:

  1. Divide the kibbeh dough into portions and shape them into round, flattened discs.

3. Cooking the Kebab:

  1. Heat olive oil in a large pot.
  2. Add the kebab discs and lightly brown them.
  3. Pour salted water into the pot, ensuring it does not fully submerge the kebabs. Cover the pot with a lid.
  4. Allow the mixture to simmer without opening the lid until the water evaporates and the kebabs are fully cooked.

4. Serving:

  1. Remove the cooked kebabs from the pot and arrange them on serving plates.
  2. Serve hot alongside a fresh salad, yogurt, or rice, depending on your preference.
