Mashkhoul Chicken is one of the most popular dishes in Kuwaiti cuisine, known for its rich nutritional value and balanced flavors. It is moderately challenging to prepare and serves five people. Follow the step-by-step instructions to create this traditional Gulf dish.
Ingredients for Mashkhoul Chicken
For the Potatoes:
- 3 medium-sized potatoes, sliced into rounds, boiled, and fried.
For the Onions:
- 2 medium-sized onions, sliced.
- 3 tablespoons of vegetable oil.
For the Rice:
- 3 cups of rice.
- 1 tablespoon of vegetable oil.
- 1 tablespoon of salt.
- Water (as needed).
For the Chicken:
- 1 kg of chicken, cut into small pieces.
- 1 medium-sized onion, quartered.
- 1 cinnamon stick.
- 1 teaspoon of ground cardamom.
- 1 tablespoon of Gulf spices.
- 1 teaspoon of mastic powder.
- 1 tablespoon of salt.
- 1 tablespoon of vegetable oil.
- Water (as needed).
For the Flavoring:
- 1 teaspoon of ground cardamom.
- 1 tablespoon of rose water.
- 1 teaspoon of saffron.
Preparation Steps for Mashkhoul Chicken
Preparing the Onions:
- Heat 3 tablespoons of vegetable oil in a pot over medium heat. Add the sliced onions and sauté until golden brown. Set aside.
Preparing the Chicken:
- Heat the vegetable oil in a pot and fry the chicken pieces until golden.
- Transfer the fried chicken to another pot, add water to cover, and bring to a boil.
- Add the quartered onion, cinnamon stick, Gulf spices, mastic powder, ground cardamom, and salt. Simmer the chicken until fully cooked.
Preparing the Rice:
- Boil water in a large pot. Add salt and vegetable oil.
- Add the rice and cook for about 10 minutes, then drain the rice.
Assembling the Mashkhoul:
- Place the fried onions at the bottom of a large pot. Add half of the cooked rice on top.
- Mix the ground cardamom, rose water, and saffron in a small bowl. Drizzle 2 tablespoons of this mixture over the rice layer.
- Arrange the cooked chicken pieces over the rice, followed by the fried potato slices.
- Add the remaining rice on top and drizzle another 2 tablespoons of the saffron mixture.
- Cover the pot and cook over low heat for 15 minutes to allow the flavors to meld.
Serving:
