Smoked mandi is a delicious and aromatic dish with high nutritional value. It is easy to prepare and takes approximately 70 minutes to cook. This recipe serves four people, and the step-by-step instructions will help you recreate this flavorful dish at home.

For the Chicken:

  • 1 kg of chicken, cut into pieces.
  • 1 tablespoon of ground cumin.
  • 1 tablespoon of ground coriander.
  • 1 teaspoon of ground cinnamon.
  • 1 teaspoon of ground cardamom.
  • 1/2 teaspoon of salt.
  • 1 teaspoon of paprika.
  • 1/2 teaspoon of black pepper.
  • 2 tablespoons of vegetable oil.
  • 2 medium-sized onions, sliced into rings.
  • 4 cloves of garlic.
  • 1 green bell pepper, chopped.
  • 2 green chilies, chopped.
  • 1 carrot, grated.
  • 2 tomatoes, diced.

For the Rice:

  • 4 cups of rice.
  • 1/4 cup of vegetable oil.
  • 4 bay leaves.
  • Whole cardamom pods (as desired).
  • Cinnamon sticks (as desired).

Preparation Steps for Smoked Mandi

Preparing the Chicken:

  1. In a bowl, mix the ground coriander, cinnamon, cumin, cardamom, salt, paprika, and black pepper until well combined.
  2. Coat the chicken pieces with this spice mixture, ensuring they are evenly covered.
  3. Heat the vegetable oil in a large pot over medium heat. Add the seasoned chicken and cook for about 10 minutes, turning occasionally, until the chicken is golden and partially cooked.
  4. Add the sliced onions, garlic, green bell pepper, green chilies, tomatoes, and grated carrot to the pot. Stir the mixture to combine and let it cook until the vegetables soften.

Preparing the Rice:

  1. Heat the vegetable oil in another pot over medium heat. Add the bay leaves, whole cardamom pods, and cinnamon sticks. Stir to release their aroma.
  2. Add the rice to the pot and gently stir to coat it with the spices and oil.
  3. Add water according to the rice cooking instructions, bring it to a boil, then reduce the heat and simmer for about 25 minutes until the rice is fully cooked.

Assembling the Mandi:

  1. Layer the cooked chicken mixture over the cooked rice in the pot. Cover and let the flavors meld together for about 5 minutes over low heat.
  2. To achieve the smoked flavor, heat a piece of charcoal until red hot. Place a small metal bowl or foil cup in the center of the rice, add the charcoal, and drizzle a small amount of oil over it. Quickly cover the pot to trap the smoke. Allow it to infuse for a few minutes before removing the charcoal.
