Al-Jabniya – Recipe and Preparation Steps

Al-Jabniya is a popular Gulf dessert, especially during the holy month of Ramadan. Known for its delicious and satisfying taste, it’s a quick and simple dessert to prepare.


Ingredients for Al-Jabniya Dough:

Al-Jabniya

 

  • 1 egg.
  • 1 tablespoon yeast.
  • 3 tablespoons powdered milk.
  • 3 tablespoons unsalted cream cheese.
  • 1 tablespoon sugar.
  • A pinch of salt.
  • ¼ cup warm water.
  • 2 tablespoons vegetable oil.
  • 2¼ cups all-purpose flour.
  • 1 teaspoon vanilla extract.

For Serving:

  • Syrup (Qater):

    • 2 cups sugar.
    • 1 cup water.
    • 2 tablespoons lemon juice or a pinch of citric acid.
  • Vegetable oil for frying.

  • Garnish: Crushed pistachios or a sprinkle of ground cinnamon.


Steps to Prepare Al-Jabniya:

1. Prepare the Dough:

  1. In a blender, combine the egg, powdered milk, unsalted cream cheese, sugar, salt, vanilla extract, vegetable oil, and warm water. Blend until well mixed. Let the mixture rest for 10 minutes.
  2. In a large bowl, place the flour and gradually pour in the blended mixture while kneading the dough by hand.
  3. Knead the dough until it becomes smooth and cohesive. Cover the dough and let it rest for about an hour to allow it to rise and become easier to shape.

2. Shape the Dough:

  1. Once the dough has risen, divide it into small balls. Roll each ball evenly with a rolling pin.
  2. Use cookie cutters in your desired shapes (circles, stars, flowers, etc.) to cut the dough. Remove the excess dough to reshape and cut again until all the dough is used.

3. Prepare the Syrup (Qater):

  1. In a saucepan, combine 2 cups of sugar, 1 cup of water, and 2 tablespoons of lemon juice.
  2. Bring the mixture to a boil and let it simmer for about 10 minutes until it thickens slightly.
  3. Remove from heat and allow the syrup to cool.

4. Fry the Dough:

  1. Heat vegetable oil in a deep frying pan until hot.
  2. Fry the shaped dough pieces in the oil, ensuring they are fully submerged. Fry until golden brown.
  3. Remove the fried dough and place it on paper towels to drain excess oil.

5. Coat with Syrup and Garnish:

  1. Dip the fried pieces into the cooled syrup, ensuring they are well coated.
  2. Remove from the syrup and place them on a serving plate.
  3. Garnish with crushed pistachios or a sprinkle of ground cinnamon.

Serving:

Serve Al-Jabniya warm or at room temperature as a delightful dessert for family or guests.
