  • 4 chicken breasts, cut into cubes
  • ½ cup of soy sauce
  • 3 tablespoons of cornstarch
  • 3 tablespoons of vegetable oil
  • 1 cup of cashews
  • ½ onion, chopped
  • 3 garlic cloves, minced
  • 1 green bell pepper, chopped
  • 1 cup of water
  • 1 teaspoon of salt
  • 1 pack of cooked and drained noodles

How to Prepare Cashew Chicken:

Step 1: Marinate the chicken

  1. In a bowl, combine the chicken cubes with soy sauce.
  2. Add the cornstarch and mix until the chicken is evenly coated. Set aside.

Step 2: Toast the cashews

  1. Heat 1 tablespoon of vegetable oil in a skillet over medium heat.
  2. Add the cashews and toast them lightly until golden. Remove and set aside.

Step 3: Sauté the vegetables

  1. In the same skillet, add another tablespoon of vegetable oil.
  2. Add the chopped onion and sauté until softened.
  3. Stir in the minced garlic and cook until fragrant.
  4. Add the green bell pepper and cook, stirring, until slightly tender.

Step 4: Cook the chicken

  1. Push the vegetables to the side of the skillet and add the marinated chicken to the center.
  2. Sear the chicken cubes, stirring occasionally, until they are golden and partially cooked.

Step 5: Combine the ingredients

  1. Add the toasted cashews back to the skillet and stir everything together.
  2. Pour in 1 cup of water, sprinkle with salt, and stir well.
  3. Cover and let the mixture simmer for 5–7 minutes until the chicken is fully cooked and the sauce thickens.

Step 6: Serve

  1. Place the cooked noodles in serving plates.
  2. Spoon the cashew chicken mixture over the noodles.
