  • 3 celery stalks, finely chopped
  • 2 cans of crushed tomatoes
  • 4 garlic cloves, mashed
  • 4 cups chicken broth
  • 3 potatoes, peeled and diced into small cubes
  • 2 bay leaves
  • ⅓ cup fresh parsley, finely chopped
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup frozen peas
  • 1 ¼ cups frozen corn

Instructions for Cooking Vegetable Soup:

  1. Heat the Oil:

    • Heat olive oil in a large pot over medium heat until warm.
  2. Sauté the Vegetables:

    • Add the chopped onion, carrots, and celery to the pot. Sauté for about 4 minutes, stirring occasionally.
    • Add the mashed garlic and stir for another minute until the ingredients are well combined.
  3. Add the Base Ingredients:

    • Stir in the crushed tomatoes, diced potatoes, bay leaves, salt, and black pepper. Mix well until the ingredients are evenly combined.
  4. Simmer the Soup:
