Egg Murtabak – Recipe and Preparation Instructions

Cooking Method for Egg Murtabak:
Prepare the Dough:
- In a large mixing bowl, combine the flour, vegetable oil, and salt.
- Gradually add the water while stirring continuously until you achieve a soft and cohesive dough.
- Let the dough rest for a few minutes.
- Divide the dough into 12 equal portions and shape them into balls.
- Coat each ball with oil and arrange them in a tray. Cover and let them rest for 30 minutes.
Prepare the Filling:
- Melt the butter in a skillet over medium heat.
- Add the chopped onion and sauté until it becomes soft and translucent.
- Add the leek, garlic, and green bell pepper. Stir and cook for 3 minutes until the vegetables are well combined.
- Add the minced meat, salt, black pepper, and spices. Stir for 2 minutes until the meat is cooked and well mixed with the vegetables.
- Add the eggs and stir until they are fully cooked. Remove the mixture from heat and let it cool.
Assemble the Murtabak:
- Roll out each dough ball into a thin circle.
- Place a portion of the filling in the center of the dough, and sprinkle mozzarella cheese on top.
- Fold the dough over the filling to seal it completely.
Cook the Murtabak:
- Heat a non-stick skillet over medium heat.
- Place the stuffed dough in the skillet and cook until it turns golden brown on both sides.
- Repeat the process for the remaining dough and filling.

- Arrange the cooked Murtabak on serving plates and serve warm.
