Eggplant Rolls – Recipe and Preparation Steps
Eggplant rolls are a delicious dish packed with a variety of nutrients, as eggplant, the star ingredient, lends its rich and unique flavor to the recipe. Below is an easy method for preparing this mouthwatering dish.
Ingredients for Eggplant Rolls:
For the Eggplant:
- 5–6 large eggplants.
- A drizzle of olive oil.
- A pinch of salt and black pepper.
For the Filling:
- 1 kilogram of finely ground beef.
- 1 medium-sized onion, chopped.
- A small amount of vegetable oil.
- 2 bay leaves.
- 1 cinnamon stick.
- 2 cloves of garlic, minced.
- 3 tablespoons of tomato paste.
- 2 tablespoons of mixed spices.
- 1 tablespoon of turmeric.
- 1 tablespoon of salt.
- 1 teaspoon of black pepper.
- 1 teaspoon of paprika.
- ½ cup of water.
- A bunch of fresh coriander, chopped.
For Serving:
- 1 carton of cooking cream.
- A small amount of shredded mozzarella cheese.
- A pinch of salt and pepper.
- A sprinkle of fresh chopped coriander for garnish.
Steps to Prepare Eggplant Rolls:
Prepare the Eggplant:
- Slice the eggplants lengthwise into thin strips.
- Sear the slices lightly with olive oil, a pinch of salt, and black pepper, using an electric grill or grill pan over low heat. Cook until the slices are slightly browned, then remove them and let them cool.
Prepare the Filling:
- Heat a little vegetable oil in a pot over medium heat. Add the chopped onions and sauté until softened.
- Add the ground beef and stir well. Season with salt, black pepper, bay leaves, cinnamon stick, and minced garlic.
- Continue cooking until the meat is partially cooked. Add the tomato paste, mixed spices, turmeric, paprika, and ½ cup of water.
- Cook until the liquid is absorbed and the mixture is fully cooked. Stir in the chopped coriander, remove the bay leaves and cinnamon stick, and let the filling cool.
Assemble the Rolls:
- Lay an eggplant slice flat and place a spoonful of the prepared filling at one end. Roll the slice tightly and place it seam-side down in a Pyrex dish. Repeat with the remaining eggplant slices and filling.
- Once all the rolls are assembled, pour the cooking cream evenly over the rolls. Sprinkle shredded mozzarella cheese on top and season with a pinch of black pepper.
Bake the Rolls:
- Preheat the oven to 180°C (350°F).
- Place the dish in the oven and bake for 10 minutes, or until the cheese melts and turns golden.
Serve:
- Garnish the rolls with fresh chopped coriander.
- Cut the rolls into square portions and serve with white rice or bread, as desired.
