Ingredients for Falafel Salad (Serves 4):

Falafel Salad

 

For the salad:

  • 1 cup of purslane leaves
  • 1 cup of mint leaves
  • 1 cup of beet leaves
  • 2 onions, sliced
  • 1 cup of cherry tomatoes, halved

For the tahini dressing:

  • ¼ cup of olive oil
  • 3 tablespoons of lemon juice
  • 1 teaspoon of salt
  • ¼ cup of tahini
  • 3 tablespoons of warm water

For the falafel:

  • 1 cup of dried chickpeas, soaked overnight
  • 1 cup of finely chopped parsley
  • ¼ cup of chopped onion
  • 2 garlic cloves
  • 1 tablespoon of lemon juice
  • ½ teaspoon of salt
  • ½ teaspoon of black pepper
  • 1 teaspoon of cumin

For frying and garnish:

  • 3 cups of oil for frying
  • Radishes, for garnish
  • Turnips, for garnish
  • Parsley, for garnish

How to Prepare Falafel Salad:

Step 1: Prepare the falafel

  1. Drain the soaked chickpeas and place them in a food processor.
  2. Add parsley, onion, garlic, lemon juice, salt, black pepper, and cumin. Process until the mixture is well combined and forms a coarse dough.
  3. Shape the mixture into small round balls.
  4. Heat oil in a deep frying pan and fry the falafel balls until golden brown. Remove and drain on paper towels.

Step 2: Prepare the salad base

  1. In a large bowl, mix purslane leaves, mint leaves, beet leaves, onion slices, and cherry tomatoes. Toss until combined.
  2. Place the fried falafel balls on top of the salad.

Step 3: Prepare the tahini dressing

  1. In a separate bowl, mix olive oil, lemon juice, salt, tahini, and warm water. Stir until the dressing is smooth and creamy.
  2. Drizzle the dressing over the salad and falafel.

Step 4: Garnish and serve

  1. Garnish the salad with radish slices, turnips, and parsley.
