  • 220 grams of boiled freekeh
  • 50 grams of green peas
  • 40 grams of pomegranate seeds
  • 30 grams of chopped pistachios
  • 60 grams of apple cider vinegar
  • 30 grams of rock salt
  • 60 grams of olive oil
  • 30 grams of pomegranate molasses
  • 1 ½ cups of water
  • 10 tomatoes for serving
  • Parsley for garnish (optional)
  • Fresh berries for garnish (optional)

How to Prepare Freekeh Salad:

Step 1: Prepare the freekeh

  1. Soak the freekeh in water for a while to soften it. Rinse it thoroughly to remove any debris or stones.
  2. Heat olive oil in a pan, add the chopped onion, and sauté until golden.
  3. Add the freekeh to the pan and stir well to combine with the onion.
  4. Pour in 1 ½ cups of water, cover the pot, and cook over medium heat until the freekeh becomes tender. If it remains firm, add more water and cook longer.
