Iraqi Lentil Rice (Timen Al-Adas) – Recipe and Cooking Instructions

Timen Al-Adas (Iraqi Lentil Rice) is one of the most delicious and popular dishes in Iraqi cuisine. It’s a nutritious and flavorful meal, rich in energy-boosting ingredients. While its origins trace back to the Levant, it gained fame in Iraq with unique additions that give it a distinct flavor.


Ingredients for Timen Al-Adas:

Iraqi Lentil Rice (Timen Al-Adas)

 

  • 2 cups of orange lentils (small-sized).
  • 2 cups of short-grain rice.
  • 4 onions, finely chopped.
  • Approximately 1 cup of vegetable oil or olive oil (preferred for its special flavor).
  • A small amount of salt (to taste).
  • 1 teaspoon ground black pepper.
  • ½ teaspoon ground cumin.
  • About 4 cups of hot water (for cooking rice and lentils).
  • 1 cup of water (for boiling the lentils).

Steps to Prepare Timen Al-Adas:

1. Prepare the Lentils:

  1. Place the lentils in a deep bowl, remove any debris or empty grains, and rinse thoroughly with cold water to ensure they are clean and free of dirt or impurities.
  2. Add the cleaned lentils to a pot, cover with water, and cook over low heat for about 30 minutes until tender.
    • Note: Do not add salt while boiling the lentils, as salt can delay the cooking process.

2. Combine the Lentils and Rice:

  1. Rinse the rice thoroughly in cold water and add it to the cooked lentils and their water. Stir gently to combine.
  2. Add boiling water to the lentil and rice mixture and cook over low heat.
  3. Season the mixture with black pepper, cumin, and a small amount of salt, then cover the pot.
  4. Let the mixture simmer on low heat for about 15 minutes, or until the rice and lentils are fully cooked.

3. Prepare the Crispy Onions:

  1. Peel the onions and slice them into thin, lengthwise strips.
  2. Heat olive oil in a frying pan over low heat. Add the onion slices and fry while stirring continuously until golden brown and crispy.
  3. Remove the onions from the oil and place them on a plate lined with paper towels to absorb excess oil.

4. Assemble the Dish:

  1. Add a generous amount of the crispy onions to the cooked lentil rice and mix gently to avoid breaking the rice and lentils.
  2. Transfer the lentil rice to a serving platter, then garnish with the remaining crispy onions on top.
  3. Optionally, decorate with fresh vegetables like parsley or tomato slices for added color.

Serving Suggestions:

  • Serve Timen Al-Adas hot with a side of salad or a cup of cold yogurt.
