Italian-style baked fish is a renowned main dish in Italian cuisine.   • A whole fish weighing approximately 2 kg.
  • Approximately 2 kg of salt.
  • A little water.
  • 6 cloves of minced garlic.
  • 1 tablespoon olive oil.
  • 2 tablespoons ground cumin.
  • 2 tablespoons ground red pepper.
  • 1 cup fresh lemon juice.

Steps to Prepare Italian-Style Baked Fish:

1. Clean the Fish:

  1. Rinse the fish thoroughly under cold water.
  2. Scrub it lightly with a mixture of salt, vinegar, and lemon juice to ensure it is clean and odor-free. Rinse again with cold water.
  3. Leave the fins and scales intact to protect the fish from absorbing the salt during baking.

2. Prepare the Marinade:

  1. In a bowl, combine minced garlic, ground red pepper, cumin, and fresh lemon juice. Mix well to form a marinade.
  2. Spread the marinade evenly inside the fish, ensuring full coverage. Close the fish’s cavity securely to prevent salt from entering.

3. Prepare the Baking Tray:

  1. Preheat the oven to 200°C (390°F).
  2. Line a baking tray with aluminum foil for easy cleanup.
  3. Spread a thick layer of salt on the tray to create a bed for the fish.

4. Coat the Fish with Salt:

  1. Place the marinated fish on the salt bed in the tray.
  2. Cover the fish completely with a medium-thick layer of salt, ensuring the entire fish is sealed.
  3. Lightly sprinkle water over the salt to help it form a solid crust during baking.

5. Bake the Fish:

  1. Place the tray in the preheated oven and bake for approximately 1 hour, or until the salt crust turns golden-yellow.

6. Serve the Fish:

  1. Remove the tray from the oven and carefully crack the salt crust using a spoon or knife. Discard all the salt.
  2. Transfer the cooked fish to a serving platter, ideally over a bed of freshly cooked rice.
  3. Serve hot with your choice of salad or sauce on the side.
