Jallab Juice – Recipe and Preparation Guide
Jallab Juice is one of the most famous cold drinks in the Arab world, enjoyed in countries like Egypt, Syria, Palestine, and Jordan. It is a staple on Ramadan iftar tables due to its delicious taste, thirst-quenching properties, and ability to energize the body after a long day of fasting. Packed with essential nutrients like magnesium, potassium, and vitamins (A, D, C), as well as minerals such as iron and zinc, Jallab Juice also soothes the stomach and eases digestive discomfort after fasting.
Ingredients for Jallab Juice:
- 2 cups grape molasses
- 1 cup white sugar
- 7 cups drinking water
- Pine nuts (for garnish, optional)
- Raisins (for garnish, optional)
- 3 tablespoons rose water
- 1/2 cup raisins (for soaking)
Steps to Prepare Jallab Juice:
Prepare the Raisins:
- Finely grind the raisins to ensure a smooth consistency.
Cook the Base:
- In a pot over medium heat, combine the grape molasses with the drinking water. Stir until the molasses dissolves completely and the mixture thickens.
- Strain the mixture thoroughly to remove any impurities.
Add Rose Water and Sugar:
- Add the rose water and white sugar to the strained mixture. Return it to the heat and bring it to a gentle boil while stirring to dissolve the sugar completely.
- Strain the mixture again for a smooth consistency.
Refrigerate:
- Transfer the strained mixture into an airtight container and refrigerate for 3 days. This will allow the flavors to deepen, resulting in a dark-colored, sweet-and-tart syrup that is ready to use.
Prepare to Serve:
- To serve, mix 1 cup of the concentrated jallab syrup with 1 liter of cold drinking water. Adjust the sweetness by adding more sugar if desired, but note that raisins naturally provide sweetness.
Serve and Garnish:
- In serving glasses, add ice cubes (optional) along with a spoonful of pine nuts, almonds, and raisins. Pour the diluted jallab over the garnish and serve immediately.
Storage Tips:
- The concentrated jallab syrup can be stored in the refrigerator for up to 7–10 days.
