Kawarea is a famous traditional dish popular in several Arab countries, particularly in Egypt. Many local restaurants specialize in preparing this dish, which is commonly enjoyed during Ramadan. Ingredients for Kawarea:
- Kawarea (cow or sheep trotters) – quantity as desired
- 2 medium onions, finely chopped
- 5 garlic cloves, minced
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1 tablespoon mixed spices
- 1 teaspoon vinegar
- 1/2 teaspoon cardamom seeds
- 1/2 teaspoon ground cloves
- 1 cinnamon stick
- 1 teaspoon ground cumin
- 1/2 cup vegetable oil
- 1 cup tomato paste
Steps to Prepare Kawarea:
Clean the Kawarea:
- Wash the trotters thoroughly with hot water multiple times. Remove any hair and rinse until completely clean.
Boil the Kawarea:
- Place the cleaned trotters in a large pot with water and bring to a boil. Let it boil for about 5 minutes, then discard the water.
- Refill the pot with fresh water and bring to a boil again. Discard the water a second time.
- Refill the pot with fresh water for the third time and add salt, cardamom seeds, cinnamon stick, and ground cloves.
- Let the trotters cook in the boiling water for about 60 minutes or until tender.
Prepare the Sauce:
- In a separate pot, heat the vegetable oil over medium heat. Add the minced garlic and chopped onions, and sauté until the onions soften and become translucent.
- Add the tomato paste, salt, mixed spices, ground cumin, and vinegar. Stir the mixture well until all ingredients are fully combined.
Combine the Sauce with the Kawarea:
- Pour the prepared sauce into the pot with the trotters. Stir gently to mix the flavors.
- Let the mixture simmer over low heat for about 30 minutes to allow the flavors to meld and the trotters to absorb the sauce.
