For the Rice:

  • 400 grams of washed rice.
  • Approximately 900 ml of water.

For the Chicken:

  • 3 tablespoons of clarified butter (smen).
  • 1 medium-sized onion, sliced.
  • 3 cloves of minced garlic.
  • 1 teaspoon of grated ginger.
  • 500 grams of skinless, boneless chicken breasts.
  • 2 chicken stock cubes.
  • 2 medium-sized tomatoes, peeled and mashed.
  • ½ cup of yogurt.
  • 1 teaspoon of lemon juice.
  • 2 tablespoons of tomato paste.
  • ½ teaspoon of ground turmeric.
  • 2 tablespoons of chopped coriander.
  • 2 tablespoons of chopped fresh mint.
  • ½ teaspoon of saffron soaked in ¼ cup of water.

Steps to Prepare Kuwaiti-Style Chicken Biryani

  1. Cook the Rice:
    Place the rice and water in a suitable pot over medium heat. Stir until it begins to boil. Cover the pot and cook the rice on low heat for about 15 minutes or until fully cooked. Remove from heat and transfer the rice to a dish to cool slightly.

  2. Prepare the Chicken Mixture:
    Heat the clarified butter in a pot over medium heat. Add the onion slices and sauté until softened. Stir in the ginger and minced garlic, cooking until fragrant. Add the chicken pieces and stir until the chicken is cooked through.

  3. Add the Flavorings:
    Add the chicken stock cubes, mashed tomatoes, yogurt, lemon juice, and tomato paste to the chicken mixture. Stir well and let it cook on low heat for 10 minutes. Remove from heat and set aside.

  4. Layer the Biryani:
    In a suitable pot, spread half of the cooked rice at the bottom. Pour the chicken mixture over the rice, and sprinkle the chopped mint and coriander over the chicken. Add the remaining rice on top, then drizzle the saffron water evenly over the top layer of rice.

  5. Steam the Biryani:
    Cover the pot tightly and cook on low heat for about 30 minutes, or until all the ingredients are fully cooked and the flavors have melded together.
