Ingredients for Lebanese Moussaka:
- 2 large eggplants, sliced into rounds.
- 2 cans of chickpeas (drained).
- ½ cup olive oil.
- 1 large onion, finely chopped.
- 5 cloves of garlic, minced.
- Salt to taste.
- 2 cups diced tomatoes.
- 1 tablespoon tomato paste.
- 1 teaspoon paprika.
- 1 teaspoon red chili powder (optional, for spice).
- 1 tablespoon dried mint.
- 1½ cups water.
Steps to Prepare Lebanese Moussaka:
1. Prepare the Eggplants:
- Brush the eggplant slices with half of the olive oil.
- Place the slices on a baking tray and bake them in a preheated oven at 180°C (356°F) for about 10 minutes, or until slightly golden.

- Heat the remaining olive oil in a pot over medium heat.
