Ingredients for Macaroni Maqluba:

Macaroni Maqluba

  • 3 pieces of chicken breasts or thighs (whole or cut into pieces).
  • 1 onion, chopped.
  • 2 garlic cloves, minced.
  • 1 green bell pepper, chopped.
  • 1 eggplant, cut into medium-sized pieces.
  • 1 zucchini, cut into half-moons.
  • 2 tomatoes, chopped.
  • 2 tablespoons olive oil.
  • Salt (to taste).
  • Black pepper (to taste).
  • A pinch of mixed spices.
  • 2 green chili peppers (optional).
  • 2 cups ring-shaped macaroni (or any type of pasta).
  • 2 cups water.

For Garnish:

  • Finely chopped parsley.

Steps to Prepare Macaroni Maqluba:

1. Prepare the Ingredients:

  1. Chop the vegetables: eggplant, zucchini, tomatoes, and potatoes into medium-sized pieces.
  2. Partially boil the macaroni in hot water for about 5–7 minutes (half-cooked), then drain.
  3. Clean the chicken thoroughly. You can either leave it whole or cut it into smaller pieces.

2. Cook the Chicken and Vegetables:

  1. Heat olive oil in a pot over low heat. Add the chopped onion and sauté until lightly golden.
  2. Add the chicken pieces and cook them slightly, stirring occasionally.
  3. Add the chopped eggplant, zucchini, potatoes, and tomatoes to the pot.
  4. Stir the ingredients gently, then add salt, black pepper, minced garlic, and the green chili peppers. Sprinkle with a pinch of mixed spices.
  5. Pour in the 2 cups of water and cover the pot. Let the ingredients simmer on low heat for about 10 minutes to soften.

3. Add the Macaroni:

  1. Once the water starts boiling, add the partially boiled macaroni to the pot.
  2. Cover and continue cooking on low heat for another 10 minutes, allowing the pasta and ingredients to fully cook and absorb the flavors.

4. Assemble the Maqluba:

  1. Place a serving plate or tray over the pot, and carefully flip the pot and plate together to invert the contents.
  2. Gently remove the pot to reveal the beautifully layered macaroni maqluba.

Serving Suggestions:

  • Garnish the dish with finely chopped parsley for a fresh and colorful touch.
  • Serve warm with a side of salad or yogurt.
