Macaroni Maqluba – Recipe and Cooking Instructions
Macaroni is a staple dish in many cuisines worldwide. This recipe introduces a creative twist by combining macaroni with the flavors and layers of the traditional maqluba. The result is an easy-to-make and satisfying dish that is perfect for any occasion.
Ingredients for Macaroni Maqluba:
- 3 pieces of chicken breasts or thighs (whole or cut into pieces).
- 1 onion, chopped.
- 2 garlic cloves, minced.
- 1 green bell pepper, chopped.
- 1 eggplant, cut into medium-sized pieces.
- 1 zucchini, cut into half-moons.
- 2 tomatoes, chopped.
- 2 tablespoons olive oil.
- Salt (to taste).
- Black pepper (to taste).
- A pinch of mixed spices.
- 2 green chili peppers (optional).
- 2 cups ring-shaped macaroni (or any type of pasta).
- 2 cups water.

Steps to Prepare Macaroni Maqluba:
1. Prepare the Ingredients:
- Chop the vegetables: eggplant, zucchini, tomatoes, and potatoes into medium-sized pieces.
- Partially boil the macaroni in hot water for about 5–7 minutes (half-cooked), then drain.
- Clean the chicken thoroughly. You can either leave it whole or cut it into smaller pieces.
2. Cook the Chicken and Vegetables:
- Heat olive oil in a pot over low heat. Add the chopped onion and sauté until lightly golden.
- Add the chicken pieces and cook them slightly, stirring occasionally.
- Add the chopped eggplant, zucchini, potatoes, and tomatoes to the pot.
- Stir the ingredients gently, then add salt, black pepper, minced garlic, and the green chili peppers. Sprinkle with a pinch of mixed spices.
- Pour in the 2 cups of water and cover the pot. Let the ingredients simmer on low heat for about 10 minutes to soften.
3. Add the Macaroni:
- Once the water starts boiling, add the partially boiled macaroni to the pot.
- Cover and continue cooking on low heat for another 10 minutes, allowing the pasta and ingredients to fully cook and absorb the flavors.

- Place a serving plate or tray over the pot, and carefully flip the pot and plate together to invert the contents.
- Gently remove the pot to reveal the beautifully layered macaroni maqluba.
