Madlouqa with cream is one of the most famous desserts in Levantine cuisine. Specialized shops often sell it alongside sweet cheese desserts in most Syrian cities. It is also a staple dessert accompanying Ramadan breakfasts, where it is almost always present on dining tables during the holy month. This is due to its incredibly delicious taste, high nutritional value, and ease of preparation, requiring only 20 minutes to make. For the First Layer:

  • 1 ½ cups of semolina
  • 1 cup of prepared syrup
  • 1 tablespoon of ghee
  • ½ cup of drinking water

For the Cream Layer:

  • 1 ½ cups of liquid milk
  • 4 tablespoons of white sugar
  • 2 tablespoons of cornstarch
  • 2 tablespoons of white flour
  • 1 can of cream
  • 5 pieces of mastic gum
  • 1 tablespoon of orange blossom water
  • 1 teaspoon of rose water
  • Roasted nuts for garnish (as desired)

Preparation Method for Madlouqa with Cream

Preparing the First Layer:

  1. Place the ghee in a suitable pot over heat. Once melted, add the semolina and stir until it turns golden in color.
  2. Pour the syrup and drinking water over the semolina and mix well until the mixture thickens and the semolina is cooked.
  3. Once ready, spread this mixture evenly in a serving dish to form the first layer.

Preparing the Cream Layer:

  1. In a suitable pot over low heat, combine the sugar, liquid milk, flour, mastic gum, and cornstarch. Stir continuously until the mixture comes to a boil.
  2. Add the cream, rose water, and orange blossom water to the mixture, stirring for an additional minute while boiling.
  3. Once the cream layer is ready, pour it over the semolina layer in the serving dish.

Final Steps:

  • Place the serving dish in the refrigerator until the dessert is completely chilled.
  • Once cooled, sprinkle roasted nuts of your choice on top (e.g., pistachios) for garnish.
  • Serve to your family or guests and enjoy its delectable taste.
