  • A little corn oil
  • 5 potatoes, sliced (for serving)

For the White Sauce:

  • A little oil
  • 1 tablespoon butter
  • 2 garlic cloves, mashed
  • 3 tablespoons flour
  • 1 cup milk
  • 1 cup cooking cream
  • A pinch of oregano

For the Red Sauce:

  • 2 garlic cloves, mashed
  • 1 tablespoon tomato paste
  • 1 cup tomato sauce
  • Spices (salt, black pepper, oregano, 1 rosemary leaf)

Instructions for Preparing Meatballs with White and Red Sauce:

  1. Prepare the Meatballs:

    • In a bowl, combine the ground meat with the chopped onion, mashed garlic, ginger, cilantro, egg, and spices.
    • Mix thoroughly by hand, then shape the mixture into small, evenly-sized meatballs.
    • Lightly coat the meatballs with flour and refrigerate for 10 minutes.
  2. Cook the Meatballs:

    • Heat a little corn oil in a frying pan and brown the meatballs on all sides.
    • Cover the pan briefly to ensure the meatballs are fully cooked, then remove them from the heat.
  3. Prepare the Red Sauce:

    • In the same pan, sauté garlic and tomato paste. Add the tomato sauce, spices, and a rosemary leaf.
    • Return the meatballs to the pan and simmer for about 3 minutes until the sauce is absorbed.
  4. Prepare the White Sauce:

    • In the same pan, heat a little oil and butter. Add mashed garlic and sauté briefly.
    • Stir in the flour and cook for a few seconds. Gradually add milk while stirring continuously to avoid lumps.
    • Add cooking cream and a pinch of oregano for flavor, cooking until the sauce thickens. Remove from heat.
  5. Prepare the Potatoes:

    • Slice the potatoes and bake them in the oven until golden and crispy.

    • For the white sauce meatballs: Layer the baked potatoes on the bottom of a serving dish, top with the meatballs, and drizzle with the white sauce.
