Ingredients for Merchant’s Pocket Sandwich:
For the Bread:
- Toast slices (quantity as needed).
- 3 eggs.
- A small amount of flour.
- Breadcrumbs (coarse or fine).
- A pinch of salt and black pepper.
- Vegetable oil for frying.
For the Filling:
- 4 tablespoons vegetable oil.
- 1 onion, finely chopped.
- 1 kg chicken breast, minced or cubed.
- 1 tablespoon salt.
- 1 teaspoon black pepper.
- 1 teaspoon paprika.
- 1 teaspoon mixed spices.
- A dash of cinnamon.
- 1 tablespoon soy sauce.
- 2 carrots, grated.
- 2 green or yellow bell peppers, chopped.
- 3 tablespoons liquid cheese.
- 1 tablespoon ketchup.
- 2 tablespoons mayonnaise.

Steps to Prepare Merchant’s Pocket Sandwich:
Prepare the Bread:
- Trim the edges of each slice of toast. Stack two slices together and roll them flat using a rolling pin. Use a round cutter to cut out circular shapes from the flattened toast. Repeat for all slices.
- Heat the vegetable oil in a frying pan or pot until hot.
- Prepare three bowls: one with beaten eggs seasoned with a pinch of salt and black pepper, one with flour, and one with breadcrumbs.
- Dip each toast circle into the flour, then the egg mixture, and finally coat it thoroughly with breadcrumbs. Ensure the breadcrumbs stick well.
