Mixed legumes is a nutritious dish, particularly popular during Suhoor in the holy month of Ramadan. It provides the body with the energy needed to endure the challenges of fasting.

  • ½ cup chickpeas
  • ½ cup beans
  • ½ cup wheat
  • ¼ cup lentils
  • ¼ cup rice
  • ¼ cup bulgur
  • 1 potato, diced into small cubes
  • 2 large onions, finely chopped
  • 3 tablespoons coconut oil
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • 12 cups water

Instructions for Preparing Mixed Legumes:

  1. Soak the Legumes:

    • Soak the chickpeas, beans, and wheat in water overnight to allow them to expand and soften.
    • Rinse them thoroughly and drain before cooking.
  2. Cook the Legumes:

    • In a large pot, bring 12 cups of water to a boil. Add the wheat and let it simmer for 20 minutes.
    • Add the chickpeas and cook for another 20 minutes over low heat.
    • Next, add the beans and cook for an additional 20 minutes.
  3. Monitor Water Levels:

    • Let the legumes simmer for an additional 30 minutes to ensure they are fully cooked.
    • Check the water level during cooking, and if it starts to decrease significantly, add more boiling water to maintain consistency.
  4. Sauté the Onions:

    • In a frying pan, heat the coconut oil. Add the chopped onions and sauté until they turn golden brown, stirring occasionally.
    • Drain the onions from the oil and add them to the pot of legumes.
  5. Add Remaining Ingredients:

    • Add the diced potato to the pot. Then, stir in the lentils, rice, bulgur, olive oil, and salt. Mix everything well to combine the flavors.
  6. Cook Until Fully Done:

    • Cover the pot and let the mixture simmer over low heat until all the ingredients are cooked through and the flavors meld together.
  7. Serve the Dish:

    • Pour the mixed legumes into serving bowls and serve hot to your family.
