Mutabbaq – How to Prepare Traditional Mutabbaq
Mutabbaq is a popular dish in the Gulf region, especially enjoyed during Ramadan iftar meals due to its delicious flavor and high nutritional value. This recipe serves eight people and takes a reasonable amount of time to prepare.
Ingredients for Mutabbaq:
For the Stew:
- 5 chicken thighs
- 1 medium onion, finely chopped
- 2 tablespoons vegetable oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon grated ginger
- 1/2 teaspoon ground cumin
- 1/2 teaspoon dried coriander
- 1 bay leaf
- 1 cinnamon stick
- 1 dried lime (loomi)
- 1 chicken stock cube
- 1 cup pureed tomatoes
- 1 tablespoon tomato paste
- 1 medium carrot, diced into cubes
- 1 medium potato, diced into cubes
- 1 green bell pepper, diced into cubes
For the Dough:
- 1 cup water
- 1/2 teaspoon salt
- 2 tablespoons vegetable oil
- 3 cups all-purpose flour
Steps to Prepare Mutabbaq:
Prepare the Dough:
- In a large bowl, mix water, vegetable oil, and salt. Gradually add the flour while kneading continuously until a firm and cohesive dough is formed.
- Cover the bowl with a cloth and let the dough rest for 2 hours.
Cook the Base:
- Heat the vegetable oil in a pressure cooker over medium heat. Add the chopped onion and sauté until golden brown.
- Stir in the black pepper, salt, cumin, ginger, dried coriander, cinnamon stick, bay leaf, chicken stock cube, and dried lime.
- Add the pureed tomatoes and tomato paste, and simmer on low heat until the mixture thickens.
Cook the Chicken:
- Add the chicken thighs to the pressure cooker along with 1 cup of water. Close the lid and cook under pressure for 15 minutes.
Prepare the Vegetables:
- After releasing the pressure, open the cooker and remove the chicken. Strain the sauce and return it to the pressure cooker along with the chicken.
- Add the diced potatoes, carrots, and green bell pepper. Cook the mixture over medium heat for 10 minutes.
Prepare the Dough Circles:
- Dust a clean, flat surface with flour. Roll out the dough and cut it into small circles using a round cutter or the rim of a glass.
- Add the dough circles to the pot along with 1 cup of boiling water. Stir gently to combine.
Final Cooking:
- Cover the pot and simmer the dish on low heat for 15 minutes, allowing the dough to cook and absorb the flavors.
Serve:
- Transfer the dish to a serving platter and arrange the chicken pieces on top. Serve hot with the delicious sauce and vegetables.
