Ouzi with Lamb – Recipe and Cooking Instructions

For the Lamb:

  • 3 kilograms of lamb meat with bones.
  • 2 bay leaves.
  • 3 cardamom pods.
  • ½ teaspoon black pepper.
  • ½ teaspoon white pepper.
  • Salt to taste.
  • 2 cinnamon sticks.
  • 1 medium-sized whole onion.
  • Drinking water (as needed).

For the Rice:

  • 3 cups of washed and soaked rice (soaked overnight).
  • 2 cups of green peas.
  • Salt to taste.
  • 1½ cups of crushed pistachios.
  • 4 tablespoons of vegetable oil.
  • 400 grams of ground beef.
  • 1 teaspoon of mixed spices.
  • 2 medium-sized onions, finely chopped.
  • 1 teaspoon of sweet paprika.
  • 1 teaspoon of ground cinnamon.
  • 1 teaspoon of black pepper.

Steps to Prepare Ouzi with Lamb

Prepare the Lamb:

  1. Place the lamb pieces in a pressure cooker, cover with water, and bring to a boil. Skim off the foam with a suitable spoon.
  2. Add the cardamom pods, bay leaves, black pepper, white pepper, cinnamon sticks, salt, and the whole onion.
  3. Close the pressure cooker and cook on medium heat for approximately 30 minutes, or until the lamb is fully cooked.
  4. Remove the lamb from the broth and set both aside.

Prepare the Rice:

  1. Heat the vegetable oil in a pot over medium heat. Toast the pistachios for about 1 minute, then remove and place them on paper towels to drain.
  2. In the same pot, sauté the ground beef with cinnamon, chopped onions, salt, and mixed spices. Stir until the meat is fully cooked.
  3. Place the soaked rice in a bowl. In a separate pot, heat vegetable oil over medium heat, then pour it over the rice.
  4. Add 6 cups of the reserved lamb broth to the rice and cook over high heat until the liquid is fully absorbed.

Combine the Ingredients:

  1. Add the cooked ground beef, peas, sweet paprika, and cinnamon to the rice. Mix well.
  2. Cover the pot and cook on low heat for 30–40 minutes, or until all the ingredients are fully cooked and the flavors have blended together.

Serve the Ouzi:

  1. Transfer the rice to a serving platter. Top with the toasted pistachios and cooked lamb pieces.
  2. Serve hot and enjoy this rich and flavorful dish with your family or guests!
