Rolled Kunafa with pistachios is one of the most famous desserts in Damascene cuisine. This sweet treat is especially popular after Iftar during the holy month of Ramadan. It is easy to prepare, requiring just 70 minutes to make, and boasts a delightful flavor and high nutritional value. Here’s how to prepare this dessert for six people.

For the Kunafa:

  • 500 grams of kunafa dough
  • 1 cup of melted butter
  • 2 cups of pistachios
  • 1 tablespoon of rose water
  • 1 tablespoon of powdered sugar

For the Syrup:

  • 1 cup of white sugar
  • 1/2 cup (or slightly more) of water
  • 1/2 teaspoon of fresh lemon juice
  • 1 tablespoon of rose water

Preparation Method

Step 1: Prepare the Syrup

  1. In a saucepan over medium heat, combine the sugar and water. Stir and bring the mixture to a boil.
  2. Add the lemon juice and rose water. Let the mixture simmer until it thickens slightly.
  3. Remove the syrup from the heat and set aside to cool completely.

Step 2: Prepare the Kunafa Dough

  1. Divide the kunafa dough into sections and spread it out lengthwise on a flat surface. Brush the dough with half of the melted butter.
  2. Toast the pistachios in a pan over medium heat with rose water and powdered sugar, mixing well.

Step 3: Assemble the Kunafa Rolls

  1. Place an appropriate amount of the toasted pistachios on one end of the kunafa dough.
  2. Roll the dough tightly around the pistachio filling into a circular or cylindrical shape.
  3. Arrange the kunafa rolls on a buttered baking tray.

Step 4: Bake the Kunafa Rolls

  1. Pour the remaining melted butter over the kunafa rolls in the tray.
  2. Preheat the oven to 180°C (356°F).
  3. Bake the kunafa rolls for approximately 30 minutes or until they turn a golden red color.

Step 5: Add the Syrup and Serve

  1. Remove the tray from the oven and drain any excess butter from the kunafa rolls.
  2. While the kunafa rolls are still hot, pour the cooled syrup over them. Let them sit for about 1 hour to absorb the syrup fully.
