Main Ingredients:

  • 500 grams lasagna pasta
  • 1 cup shredded mozzarella cheese
  • 500 grams boiled and chopped spinach
  • 1 medium onion, finely chopped
  • ¼ cup olive oil
  • Salt (to taste)
  • Boiling water (as needed for cooking lasagna)
  • Cold water (as needed for cooling lasagna)

For Bechamel Sauce:

  • 4 cups liquid milk
  • 6 tablespoons all-purpose flour
  • 6 tablespoons butter
  • Salt (to taste)
  • ¼ teaspoon black pepper
  • ¼ teaspoon white pepper

Instructions for Preparing Spinach Lasagna:

Step 1: Prepare the Spinach Filling

  1. Heat the olive oil in a pan over medium heat. Add the chopped onion and sauté for about 10 minutes until softened.
  2. Add the boiled spinach and salt, and stir for about 2 minutes until the ingredients are well combined.

Step 2: Cook the Lasagna Sheets

  1. In a separate pot, boil water and cook the lasagna sheets until tender, following the package instructions.
  2. Transfer the cooked lasagna sheets to a bowl of cold water to cool, then set aside.

Step 3: Assemble the Lasagna

  1. Lightly grease a baking dish with olive oil.
  2. Layer the lasagna sheets at the bottom, followed by a layer of spinach filling.
  3. Repeat the layering process, alternating lasagna sheets and spinach filling, until all the spinach mixture is used.

Step 4: Prepare the Bechamel Sauce

  1. Melt the butter in a saucepan over low heat. Add the flour and stir until the mixture is smooth and turns light yellow.
  2. Gradually add the milk while stirring constantly to avoid lumps.
  3. Cook for about 20 minutes, stirring continuously, until the sauce thickens.
  4. Season with salt, black pepper, and white pepper, then remove from heat.

Step 5: Bake the Lasagna

  1. Pour the bechamel sauce over the assembled lasagna. Sprinkle the shredded mozzarella cheese evenly on top.
  2. Preheat the oven to 200°C (390°F).
  3. Bake the lasagna for about 45 minutes, or until the cheese is melted and golden brown.

  1. Remove the lasagna from the oven and let it cool slightly before cutting.
