Sumac Chicken Rolls are a delicious appetizer, commonly served on special occasions, buffet tables, or during Ramadan. Their simplicity in preparation, attractive presentation, and delightful taste make them a favorite choice. Here's how to prepare Sumac Chicken Rolls in the easiest way.

Filling:

  • 1 medium onion, finely chopped
  • 500g (1 lb) skinless chicken
  • A small amount of sumac (1–1.5 tablespoons)
  • A pinch of salt
  • A dash of black pepper
  • A small amount of olive oil
  • Bay leaves, cardamom pods, and mixed spices (for boiling the chicken)

Wrapping:

  • Ready-made samosa pastry sheets

Sauce:

  • 1 cup plain yogurt
  • 2 tablespoons cream cheese
  • A sprinkle of sumac

Steps to Prepare Sumac Chicken Rolls:

  1. Cook the Chicken:
    Clean the chicken breasts thoroughly, ensuring the skin is removed if present. Boil the chicken in a pot with water, adding a dash of black pepper, bay leaves, cardamom pods, and mixed spices. Boil for about 1 hour until fully cooked. Remove the chicken from the water, discard the bay leaves and cardamom pods, and place the chicken in a bowl. Shred the chicken into small pieces either by hand or with a fork.

  2. Prepare the Filling:

    • Heat a little olive oil in a pan and sauté the finely chopped onion until it softens.
    • Add the shredded chicken to the pan and stir well.
    • Season with salt, black pepper, and sumac (adjust sumac quantity to taste, about 1–1.5 tablespoons).
    • Continue stirring for about 10 minutes until the chicken absorbs the flavors and takes on a reddish color from the sumac.
    • Remove from heat and let the mixture cool slightly.
  3. Prepare the Rolls:

    • Lay a samosa pastry sheet flat on a wooden board and cut it in half.
    • Place a small amount of the prepared filling at one end of the sheet.
    • Roll the sheet tightly into a cylinder or "roll" shape.
    • Seal the end by brushing a little cream cheese or secure it with a toothpick. Repeat for the remaining sheets and filling.
  4. Bake the Rolls:

    • Arrange the rolls on a baking tray and brush them lightly with olive oil.
    • Bake in a preheated oven at 180°C (350°F) for about 10 minutes, or until golden brown on both sides.
  5. Prepare the Sauce:

    • In a small bowl, mix yogurt with cream cheese and a sprinkle of sumac. This adds a unique color and flavor to complement the rolls.
  6. Serve:
    Serve the baked rolls hot with the prepared sauce on the side. Garnish with a light sprinkle of sumac or toasted pine nuts for an extra touch.
