Syrian Ma'arouk – How to Prepare Delicious Cheese-Filled Ma'arouk

Ma'arouk is one of the most famous and delicious Syrian pastries. It comes in various types and shapes, filled with different ingredients such as chocolate and coconut, raisins and bananas, or savory options like delicious cheese.

Here, we will present the method to prepare Syrian Ma'arouk with a cheese filling, starting with the essential ingredients.


Ingredients for Cheese-Filled Ma'arouk:

  • 3 cups of sifted fine flour
  • 1/2 tablespoon of sugar
  • 1 teaspoon of salt
  • 1/4 cup of oil
  • 1 cup of water
  • 4 tablespoons of powdered milk
  • 1 teaspoon of baking powder
  • 1 tablespoon of instant yeast
  • 1 tablespoon of butter
  • 1/2 teaspoon of vanilla
  • 1/4 teaspoon of orange blossom water
  • 1 egg
  • 1 cup of Kashkaval cheese (or any preferred fresh cheese)
  • 3 tablespoons of nigella seeds (black cumin)

Preparation Method:

  1. Prepare the Dry Ingredients:
    In a large bowl, combine the sifted flour, vanilla, orange blossom water, baking powder, powdered milk, and salt. Mix the dry ingredients thoroughly.

  2. Activate the Yeast:
    In a separate bowl, mix water with the instant yeast and sugar, stirring until completely dissolved. Add the melted butter and continue stirring for five minutes until the mixture is well combined.

  3. Combine the Ingredients:
    Gradually add the flour mixture to the wet ingredients, stirring continuously. Once all the flour is incorporated, knead the dough thoroughly until it becomes soft and smooth. Cover the dough with a plastic bag and place it in a warm spot to rise for about one hour.

  4. Shape the Dough:
    Once the dough has risen, divide it into small portions and roll each piece into a ball. Flatten each ball into a rectangular shape, sprinkle with Kashkaval cheese, and fold the edges to form a cheese-filled roll. Press the roll gently to flatten slightly. For decoration, use a sharp tool to make cuts along the edges, shaping it into a flower, braid, or simply leave it as a round disk.

  5. Prepare the Baking Tray:
    Grease a baking tray with oil or line it with parchment paper. Place the shaped dough pieces close to each other for a visually appealing arrangement. Brush the surface of each piece with beaten egg to give it a golden color when baked, and sprinkle with nigella seeds for added flavor.
