Turkish Simit – Recipe and Preparation Steps

Turkish Simit, also known in some countries as simit or poğaça, is a circular bread coated with a layer of sesame seeds. Some prefer adding roasted flaxseeds for an extra twist. Originating from ancient Turkish cuisine, this dish has spread worldwide while retaining its authentic Turkish charm.


Ingredients for Turkish Simit:

For the Dough:

  • 6 cups of flour.
  • ½ cup warm water.
  • 1 egg.
  • 4 tablespoons yogurt.
  • 2 tablespoons vinegar.
  • 1 tablespoon salt.
  • ½ tablespoon sugar.
  • ½ cup warm milk.
  • 1 tablespoon baking powder.
  • ¼ cup vegetable oil.
  • 1 tablespoon yeast.

For the Coating Mixture:

  • ½ cup butter.
  • 2 egg yolks.
  • ½ cup vegetable oil.
  • ¼ cup toasted sesame seeds.

Steps to Prepare Turkish Simit:

1. Activate the Yeast:

  1. In a cup, mix the yeast with a small amount of sugar.
  2. Add a little warm water, stir well, and let it rest for 10 minutes until the yeast is activated and frothy.

2. Prepare the Dough:

  1. In a deep bowl, combine the egg, vinegar, yogurt, vegetable oil, and salt. Whisk well until fully blended.
  2. Gradually add the flour, warm milk, and yeast mixture to the bowl while continuously mixing.
  3. Knead the dough by hand for about 10 minutes until it forms a smooth ball.
  4. Place the dough in a deep bowl greased with vegetable oil. Cover with plastic wrap and a clean cloth. Leave it to rise for 1 hour.

3. Roll and Shape the Dough:

  1. After the dough has risen, knead it lightly and divide it into 4 equal portions.
  2. Roll each portion into thin sheets using a rolling pin.
  3. In a small bowl, mix the butter and vegetable oil for the coating. Brush the mixture generously over each sheet.
  4. Stack the sheets on top of each other, then roll them tightly into a log.
  5. Cut the log into equal triangular pieces.

4. Arrange and Prepare for Baking:

  1. Grease a circular baking pan with butter or line it with parchment paper.
  2. Arrange the triangular pieces in the pan in a circular pattern, ensuring there is a piece in the center.
  3. In a small bowl, mix the egg yolks with sesame seeds. Brush this mixture over the surface of the dough pieces.
  4. Cover the pan with a damp cloth and let it rest for 15 minutes to allow the dough to puff up and the pieces to stick together.

5. Bake the Simit:

  1. Preheat the oven to 185°C (365°F).
  2. Place the pan in the oven and bake for about 30 minutes, or until the simit is golden brown and fully cooked.

6. Serve:

  1. Remove the pan from the oven and let the simit cool slightly.
  2. Serve warm with a cup of hot tea.
