Yemeni Aqda is a traditional dish from Yemeni cuisine, known for its rich flavors and high nutritional value. It is easy to prepare, requiring 15 minutes for preparation and 75 minutes for cooking.

Ingredients for Yemeni Aqda:

Al-Aqda Al-Yamaniya

 

  • 600g of lamb meat, cut into pieces
  • 1 medium onion, finely chopped
  • 3 potatoes, sliced into rounds
  • 1 medium green bell pepper, diced
  • 2 tablespoons of tomato paste
  • 2 medium tomatoes, diced
  • 1 tablespoon of cumin
  • 1 teaspoon of ground cardamom
  • 1 teaspoon of coriander powder
  • ½ teaspoon of powdered ginger
  • Black pepper (to taste)
  • Salt (to taste)
  • 1 tablespoon of hot chili paste
  • 2 tablespoons of vegetable oil
  • Water (as needed)

Preparation Method for Yemeni Aqda:

  1. Cooking the Meat:

    • Heat 1 tablespoon of oil in a pot over medium heat.
    • Add the chopped onion and sauté until softened.
    • Add the lamb pieces and continue stirring until the meat changes color on all sides.
  2. Frying the Potatoes and Vegetables:

    • In a separate pan, heat the remaining tablespoon of oil and fry the potato slices until golden brown on both sides.
    • Add the diced bell pepper, tomatoes, cardamom, cumin, ginger, and coriander, then stir well.
  3. Combining the Ingredients:

    • Transfer the potato mixture to the pot with the lamb.
    • Add the tomato paste and hot chili paste, then pour enough water to cover all ingredients.
  4. Final Cooking:

    • Add black pepper and salt to taste.
    • Bring the mixture to a boil, then reduce the heat to low and let it simmer for 45 minutes, or until all ingredients are fully cooked.
  5. Serving:

    • Once done, transfer the Yemeni Aqda to a serving dish.
    • Serve hot to family or guests, and enjoy this flavorful traditional dish.
