Aziziya – How to Prepare Aziziya – Aziziya Recipe – Cooking Guide

Aziziya is one of the most delicious and easy-to-make desserts, known for its unique and delightful taste.

Ingredients for Aziziya:

  • 1 pack of pasta
  • 4 cups of yogurt or milk
  • 1 ½ cups of sugar
  • 3 egg yolks
  • 1 tablespoon of vanilla powder
  • A pinch of salt
  • 3 tablespoons of cornstarch dissolved in ¾ cup of cold water
  • 1 cup of seedless raisins
  • 1 cup of nuts (walnuts or almonds, as desired)
  • ¼ cup of vegetable oil or 2 tablespoons of soft plant-based butter

Method of Preparing Aziziya:

  1. Start by pouring 2 liters of water into a deep pot and placing it over medium heat until it begins to boil. Add the pasta, 1 tablespoon of vegetable oil, and a pinch of salt, and let it cook until the pasta is fully tender.

  2. After about 10 minutes, the pasta should be well-cooked. Remove the pot from the heat, drain the pasta using a suitable strainer, and rinse it well under cold water for 5 minutes to prevent it from sticking together.

  3. In a deep pot over low heat, pour the yogurt or milk (make sure it is sweet, not sour). Allow it to warm up until it starts to simmer.

  4. Add the sugar and a pinch of salt while stirring continuously until the sugar completely dissolves. Then, add the cooked pasta and let it simmer for about 1 minute before removing it from the heat.

  5. Let the mixture cool for 10 minutes, then transfer it to a blender and blend until it becomes completely smooth.

  6. Pour the blended mixture back into the pot and return it to low heat. Gradually add the dissolved cornstarch while stirring continuously.

  7. Slowly add the beaten egg yolks and vanilla, stirring constantly to prevent lumps from forming.

  8. Continue stirring until the mixture begins to boil, then immediately remove it from the heat.

  9. Grease a baking dish with butter or corn oil, then evenly spread the raisins and nuts on the surface.

  10. Pour the prepared mixture into the baking dish and place it in a preheated oven at 180°C (356°F) for about 30 minutes, or until the dessert sets and golden spots appear on the surface.

  11. Remove the dish from the oven and allow it to cool slightly before serving warm.
