How to Prepare Baked Vegetable Tray

  1. Preheat the oven to 200°C (392°F).
  2. In a baking tray, place the green bell pepper cubes, zucchini slices, eggplant slices, onion pieces, and cherry tomatoes. Mix them well so that the ingredients are evenly distributed across the tray.
  3. Sprinkle the salt and dried basil evenly over the vegetables.
  4. Drizzle the vegetable oil over the top of the vegetables, ensuring that it’s evenly distributed.
  5. Cover the baking tray with aluminum foil to keep the vegetables from drying out.
  6. Place the tray in the preheated oven and bake for about 30 minutes or until all the vegetables are tender.
