Dough Ingredients:
- 4 cups of flour
- 2 tablespoons of yeast powder
- 1 teaspoon of bread improver powder
- 1 teaspoon of sugar
- 2 tablespoons of salt
- 1 cup of milk or yogurt
- ½ cup of vegetable oil
- 1 egg
- Warm water as needed
Filling Ingredients:
- 1 kg of cheese
- 3 tablespoons of black seed (habbat al-barakah)
- 3 tablespoons of dried mint
- 3 tablespoons of olive oil
How to Prepare Cheese Pastries:
Start by preparing the dough. In a deep bowl, combine the flour, salt, sugar, and bread improver powder. Mix the dry ingredients well.
In a separate cup, add the yeast with half a teaspoon of sugar, mix it well, then pour in some warm water. Close the cup tightly and leave it for 10 minutes until the yeast expands and becomes active.
Create a well in the center of the dry ingredients and add the egg and yogurt. Mix the dry ingredients with the yogurt and egg, then pour in the yeast mixture. Knead the dough well until it is soft and cohesive.
Place the dough in an oiled bowl, cover it tightly with a piece of plastic wrap, then a thick cloth. Leave it in a warm place for 1 hour to rise.
While the dough is rising, prepare the filling. Place the crumbled cheese into a suitable bowl, add the dried mint, black seed, and olive oil. Mix the ingredients well until they are thoroughly combined.
After the dough has risen, divide it into round, evenly-sized pieces. Place them on a flat surface dusted with flour.
Roll out each dough ball on a smooth surface brushed with oil to form medium-thick discs. Place an appropriate amount of filling in each disc, then fold the edges of the dough to seal them. Repeat this process until all the dough is used.
Arrange the pastries on a baking sheet that has been oiled, leaving enough space between each pastry. The baking sheet should be preheated.
Bake the pastries in a preheated oven at 180°C until the bottom of the pastries turns red and their outer surface becomes golden. Once done, remove the pastries from the oven and place them on a clean cloth to cool slightly.
Arrange the slightly cooled pastries on a suitable serving dish and serve warm.
