Chicken Maqluba with Potatoes is one of the many variations of Maqluba, a beloved Middle Eastern dish known for its rich flavors and high nutritional value. It is relatively easy to prepare and takes about one hour to cook. For the Chicken and Vegetables:

  • 3 medium onions, sliced
  • 3 medium tomatoes, sliced
  • 4 cloves of garlic, minced
  • 3 cups of water
  • 2 green bell peppers, sliced into rounds
  • 8 pieces of chicken thighs or breasts
  • 1 tablespoon of chicken spices
  • Salt (to taste)
  • Black pepper (to taste)
  • 1 teaspoon of curry powder
  • 2 tablespoons of chopped fresh cilantro
  • 2 dried black lemons (loomi)
  • 4 cups of cooked rice
  • 4 tablespoons of olive oil
  • 1 teaspoon of dried coriander
  • 1 medium zucchini, sliced into rounds
  • 1 kg of potatoes, sliced into rounds
  • 4 tomatoes, sliced and roasted

How to Prepare Chicken Maqluba with Potatoes:

Step 1: Frying the Vegetables

  1. Heat vegetable oil in a frying pan and fry the potato and zucchini slices until golden brown.
  2. Remove and set aside on a paper towel to drain excess oil.

Step 2: Cooking the Chicken

  1. In a large pot, heat olive oil and sauté the onion slices until golden.
  2. Add the tomato slices and stir until softened.
  3. Stir in the minced garlic and bell pepper slices, cooking until the peppers soften.
  4. Add the salt, black pepper, chicken spices, and dried coriander, mixing well.
  5. Place the chicken pieces into the pot, stir to coat with spices, then add the dried black lemons (loomi) and chopped fresh cilantro.
  6. Pour in 3 cups of water, cover the pot, and let the chicken simmer for 20 minutes until tender.

  2. Spread the cooked chicken mixture evenly over the potatoes.
  3. Layer the fried zucchini on top of the chicken.
  4. Add a layer of roasted tomato slices, followed by another layer of fried potatoes.
  5. Evenly distribute the cooked rice over all the layers, pressing it down gently.

Step 4: Cooking and Flipping the Maqluba

  1. Cover the pot and cook over low heat for about 10 minutes, allowing the flavors to meld together.
  2. Carefully flip the pot onto a large serving platter, allowing the layers to reveal themselves beautifully.
