Ingredients for Chocolate Cupcakes:
- 6 large eggs
- 4 cups of all-purpose flour
- 3 tablespoons of vanilla powder
- 1 cup of melted butter
- 3 tablespoons of baking powder
- 1 teaspoon of salt
- 1 cup of unsweetened cocoa powder
- 2 cups of lukewarm water
- 2 cups of sugar
- 1 teaspoon of white vinegar
- Zest of 1 lemon
- 1 cup of warm liquid milk

- 1 cup of sugar
- 1 cup of dark chocolate
- 1 cup of soft butter
- 1 tablespoon of vanilla powder
Preparation Method for Chocolate Topping:
- Place the chocolate in a double boiler and let it melt over low heat while stirring continuously.
- Once melted, remove it from the heat and let it cool slightly.
- Add the soft butter and sugar, then beat the mixture with an electric mixer for 5 minutes until the sugar is fully dissolved, resulting in a smooth, cohesive chocolate mixture.
Preparation Method for Cupcakes:
- Start by placing the eggs, lemon zest, and vinegar in the bowl of an electric mixer. Whisk the ingredients for 10 minutes until well combined.
- Add the sugar and vanilla powder, and continue whisking.
- Gradually add the milk, cocoa powder, and lukewarm water while continuing to whisk until you obtain a smooth mixture.
- Slowly add the flour, salt, and baking powder, and increase the speed of the mixer.
- Add the melted butter (or corn oil if preferred) and mix well until you get a soft, smooth batter.
- Grease the paper molds with a little vegetable oil, then pour the batter into each mold.
- Arrange the molds on a baking tray and place the tray in a preheated oven at medium temperature for about 20 minutes.
- Once the cupcakes are done, remove them from the oven and set them aside to cool.
- After they have cooled, arrange the cupcakes on a serving plate and spread a generous amount of chocolate topping on each one.
