Cucumber and Yogurt Salad – Recipe & Cooking Instructions
Cucumber and yogurt salad is one of the most delicious and refreshing salads, popular throughout the Arab world. This salad is known for its quick and easy preparation, delicious taste, and the nutritional benefits it provides from its simple ingredients.
Ingredients
- 8 cucumbers
- 4 cloves of crushed garlic
- 1 kg of yogurt
- 1/2 cup of finely chopped fresh mint
- 1 tablespoon of salt
- 2 tablespoons of dried mint
Preparation Method
Prepare the Vegetables:
- Wash the cucumbers thoroughly with a mixture of vinegar and salt, then rinse them with cold water. Place the cucumbers in a strainer to remove any excess water.
- Clean the mint leaves by washing them well with cold water. Soak the mint leaves in a mixture of vinegar and water for about 10 minutes, then rinse them with cold water again. Place the mint in a strainer to remove any remaining water.
Prepare the Cucumber and Mint:
- Cut the cucumbers into small, uniform cubes after removing the ends. Place the cucumber cubes in a deep bowl.
- Finely chop the mint leaves and add them to the bowl with the cucumber cubes.
Prepare the Garlic and Salt:
- Add the crushed garlic and salt to the cucumber and mint mixture. Stir well to combine.
Prepare the Yogurt Mixture:
- In a separate deep bowl, pour half of the yogurt and add a pinch of salt. Mix thoroughly, then add 2 cups of cold water. Stir until the yogurt and water are well combined.
Combine the Salad:
- Gradually add the yogurt mixture to the cucumber and mint mixture, stirring continuously until all the ingredients are well incorporated.
Serve:
- Transfer the salad to a deep serving dish. Sprinkle the surface with a little dried and crushed mint.
- The salad is now ready to serve. Serve chilled as a side dish with any main course, especially those that include rice, such as pea muqluba, eggplant muqluba, or fried green beans with oil.
