  • 1 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • ½ teaspoon salt

For the Sauce:

  • 1 cup plain yogurt
  • ½ teaspoon ground cumin
  • 3 garlic cloves, mashed
  • 1 teaspoon salt

How to Prepare Eggplant Dolma:

1. Preparing the Eggplants:

  1. Wash the eggplants thoroughly and hollow them out carefully using a coring tool, ensuring you do not pierce the bottom.

2. Making the Filling:

  1. Heat vegetable oil in a pan over medium heat and sauté the chopped onion until translucent.
  2. Add the ground meat, diced tomatoes, black pepper, and salt, stirring occasionally until the meat is fully cooked.
  3. In a separate pot, rinse the rice thoroughly and boil it with 1 cup of water until it is half-cooked. Drain any excess water.
  4. Combine the parboiled rice with the meat mixture, stirring well to create a uniform filling.

3. Stuffing the Eggplants:

  1. Fill each eggplant with the prepared stuffing, leaving a little space at the top to allow for expansion during cooking.
